Our story

Walter Pat's Bakery Cafe is a seasonally driven small-batch black woman-owned bakery, based in Detroit. Walter Pat's showcases unique flavor combinations and some good classics, as well. We are inspired by our midwest upbringing and southern influence. We can't wait for you to experience what we have to offer.

Meet the chef

Chef Lauren Ellis is the owner and pastry chef. She is a graduate of the Culinary Institute of America. Once graduating in 2010, Lauren moved to NYC to work in three-star restaurants Colicchio and Sons; and Betony.

In 2014, with experience under her belt, she set out to find adventure by moving to Sydney, Australia. Traveling allowed Lauren to discover new cultures and flavors. She also worked in two of Sydney's finest restaurants: Aria Sydney and Tetsuya's. Following her year of exploration, Lauren moved back to the states and experienced a fast pace in the midwest's Chicago. There she had the honor of working at Gilt Bar and Floriole Cafe and Bakery.

In 2020, Lauren took all of the knowledge she gained and decided to build something of her own. She went back to her hometown in Detroit, MI, and officially opened Walter Pat's. Being able to share her talent with the community is a dream come true.
